roasted chicken

I like having holiday...less stress...it Christmas so mean cuti!!!!yeay...dis week kalo tgk afc ke...tlc ke...food network channel ke...sumer roasted some turkey...yok rasted some chicken then..kekeke...actly recipe very simple...just take time...so as usual i like 2 mix recipe...from jamie+martha...made it for 1st trial!!!


1.6 kg chicken
2 medium onions
2 carrots
1 bulb garlic
oil
salt
freshly ground black pepper
1 lemon
1 small bunch fresh thyme, rosemary,
cara2 nk ikat ayam...
To prepare your chicken
Take your chicken out of the fridge 30 minutes before it goes into the oven. Preheat your oven to 240°C. There's no need to peel the vegetables – just give them a wash and roughly chop them. Break the garlic. Take about ¼ butter mix with crush herb then put under chicken skin. Smooth it till reach chicken breast. Tuck the wing tips under the chicken. Wrap the string under the neck end of the bird, pulling the string ends up over the breast, toward you, plumping up the breast. Then cross the string under the breast (above the cavity and between the legs). Wrap each end around the closest leg end, and tie tightly so that the legs come together. Pile all the veg and garlic into the middle of a large roasting tray and drizzle with salt and oil. Drizzle the chicken with oil and season well with salt and pepper, rubbing it all over the bird. Put the lemon inside the chicken's cavity, with the bunch of herbs.

To cook your chicken
Place the chicken on top of the vegetables in the roasting tray and put it into the preheated oven. Turn the heat down immediately to 200°Cand cook the chicken for 1 hour and 20 minutes. When cooked, take the tray out of the oven and transfer the chicken to a board to rest for 15 minutes or so. Chicken gravy take the mushy veg and pan juice into blender.



Mashed Potato Recipes
8 potatoes
2/3 cup butter, melted
½ cup milk (or cream for richer potatoes), room temperature
Salt and pepper to taste
Cut potatoes in small chunks, cover with salted water, and boil just until tender. Drain well and immediately add the butter.  Mash potatoes and add the milk once you have finished the initial mashing.  Add salt and pepper to taste.
Gravy:
4 cups chicken stock
4 tablespoons butter
4 tablespoons flour
Heat butter on medium-high setting until melted – but not burned. Add flour and whisk it until it’s well incorporated – important to cook at least 1 minute so the flour taste is absorbed – whisking continually. Add chicken stock, add salt or pepper to taste.
